Pinterest recipe 2 semi-success!

Hi :)
So I recently tried a french bread recipe that I found on pinterest-Deals to Meals--French Bread recipe
She seems to have some pretty great recipes and many people love her.  This was the first time I have ever tried her recipe, and it was a semi-succes!  I love baking, and am an self proclaimed bread baking expert!

I followed her recipe as much I could but had some problems (as did other people).  Since I am still quite new to blogging, I didn't think to take any pictures of my process, but wish I did.  I was doing fine while mixing the dough together, I did it just like she said.  My first problem was I tried to proof my yeast--which I NEVER EVER do, but did because she had specific instruction.  I do not feel it was necessary since I usually just drop the whole pack of yeast (I use rapid rising yeast) in at the end.
The second issue I had was the dough was just to sticky, I mean OMG just ridiculously sticky.  She said to add flour until it is not as sticky but more manageable, so I did that.  I added about 8.5 cups of floor (although the recipe said 6-7 cups).  I would have added more, and probably should have so the dough would be able to hold its shape more, but I got worried and stopped.
So I let it rise the way she did (water in the oven and all), and had moderate success, usually my dough rises to the top, but this was just the bare minimum kind of rise.

After I punched the dough down about 4-5 times, I took the dough out of the mixing bowl, and put it on a pre-greased counter.  I tried to manipulate the dough into two loaves. The amount of stickiness was unbelievable, I mean OMG.  I just couldn't deal with, it was insane.  I tried to add more flour but at this point it was useless so I just shaped the dough and put it into my french bread pan.
I put it back into the oven to allow it to rise a little bit more, and this was where I had my 3rd problem.  OVERFLOW!  The loaves had overflowed (since they did not hold their shape) onto the bottom of the oven, and was coming out on all sides.  At this moment, I finally panicked, but thankfully my mom had come home so I had some help. She knew how to handle some of the overflow, and how to get some of the dough out of the bottom of the oven.  So we cleaned it up, and crossed our fingers and baked the bread.  FINALLY.   I was just so happy to finally get to this point!

Luckily our bread baked up just fine, and it was quite good.  The taste, softness and flavor of the bread was just excellent.  It was not the most perfect experience (by a long shot), but would def try it again.  Remedy it by using more flour, and making 3 loaves instead of 2.

Not to shabby for all of the trouble I went through.  They look good and taste great, so in the end thats the most important thing.
